Monday Menu Planner
12.15.2008
Okay, here's what we're going to eat this week. Again, I'm only listing dinners because I eat eggs or a kefir smoothie almost every morning, and lunch is leftovers.
Monday: Fried Clams with baked sweet potatoes and veggies
Chris didn't notice the little pint container with clams when he was making the chowder - he just used the ones in the quart container - so we have some leftover Cherry Stone clams. I'm going to roll them in Bob's Red Mill Gluten-free flour and fry them up in coconut oil. Should be yummy! I've never tried it before. If this tastes good, I have some wild-caught cod in the freezer that will meet the same fate :).
Tip for buying clams: Order ahead to have them shucked for you. Great time saver, and although my wonderful husband knows how to shuck them, I haven't the faintest idea!
I went last weekend to purchase clams - I wanted fresh ones, not frozen or canned. They only had whole clams (unshucked), but said if I ordered ahead they would shuck them for me at no extra charge. So I ordered 3 dozen Cherry Stones for pick up two days later. Of course, when I got there the guy had forgotten to shuck them and promised he could do it in 10 minutes. When he was finished, he gave me his employee discount for making me wait and I ended up paying $7.89 for 3 dozen clams!
Tuesday: Chicken soup made with home-made bone broth and local veggies.
A good tip from a friend - always buy chicken with the bones. As you eat it through the week, put all the bones into a gallon zip-lock in the freezer. Once you fill up the bag, make some bone broth! We purchase our chickens from a soy-free farmer in Southern Maryland, so it comes with all the bones (and heads and feet if you want them) included. We ordered a package of chicken breasts last week that were still on the bone - they were huge! And juicy :). Isn't that sad that, in my entire life, I had never seen anyone sell chicken breasts still on the bone?
Wednesday: Meatloaf with mashed potatoes and veggies.
I haven't gotten any more specific on the veggies for this week, because I plan to buy whatever is local and in season at David's Natural Market right down the street. Could be acorn squash, could be just a salad of local greens, could be anything!
Thursday: Leftover meatloaf
Okay, not really that interesting to put leftovers on there, but last week we had a lot of leftovers and even after taking them for lunch we still had some for the weekend. I don't like to waste food, so I'm going to plan a leftovers day. Plus, we are pretty tired by the time Thursdays come around and neither of us feels like cooking.
Friday: Fried fish with peas and home-made honey mustard dipping sauce.
I'll have to post the recipe later for the dipping sauce. Also on my to-do list soon is make my own ketchup! I know it involves tomatoes and fish sauce, but I'll have to look it up in Nourishing Traditions again to finally learn how to make it. If you've never seen this cookbook, I'd recommend checking it out from your local library. It was so fascinating - stories on the sidebars of each page. I read it straight through like a novel!
Saturday: Beef Enchiladas (frozen from last month) with homemade sauce and sprouted tortillas.
We'll be packing for our trip to Louisiana the next day and getting the dog ready to go stay at a friend's house, so I'm anticipating not wanting to worry about cooking that day. I'm pretty excited about going home for Christmas! It's been two years since I've been back home!
